Sherry is built through the solera: rows of old barrels topped up over time, so younger wine picks up the depth of older wine. The glass can be bright, salty, nutty, rich, or sweet.

We pour from Jerez and Sanlúcar, with one bottle from up the road: the Esquimalt Dry Vermut, made on the south island. Order a cold Fino, ask for almonds, and keep going from there.
